About La SERA



pizza la sera is a traditional roman style pizza. it is made with a long-fermented dough that is hand shaped and hand-stretched by our bakers. the dough is then baked directly on the stone floor of an oven heated to 580 degrees for 10-12 minutes. after baking, the pizza is slipped from the oven onto its namesake paddle, topped with fresh ingredients, and served.

the slow fermentation results in a pizza that boasts a thick crust with a crispy exterior that yields to a soft, fluffy interior with each perfect bite. during this long fermentation, proteins and starches in the dough begin to break down, making the dough not only delicious but also easier for our bodies to digest and absorb the available nutrients.
